Bacon and brie frittata

- Preheat oven to 220°C, gas mark 6. Slice the brie and set aside.
- Heat the oil in a 30cm round heavy-base ovenproof frying pan or baking dish over a high heat.
- Add the bacon and fry, turning frequently, for 2 minutes or until crisp. Remove the pan from the heat and set aside some of the bacon.
- Preheat the grill.
- Place the eggs, cream, Parmesan, salt and pepper in a large bowl and whisk until well combined.
- Pour the egg mixture into the pan, arrange the sliced brie on top.
- Grill the frittata for 15 minutes or until just set.
- Sprinkle with extra pepper, reserved bacon and thyme leaves.
