Zaatar, cucumber and feta finger sandwiches

  1. Thinly slice the cucumber.
  2. Crumble the feta cheese. Chop the mint leaves. In a small bowl, combine the feta, mint, yoghurt and za’atar.
  3. Lay out the slices of bread. Spread a generous layer of the feta filling on each slice. On every alternate slice of bread, layer the cucumber slices. Top with another slice of bread.
  4. Trim the crusts and cut each sandwich into finger-sized pieces.
  5. Arrange the za’atar, cucumber and feta finger sandwiches on a platter and serve.
